  2. Add the zucchini, carrots, celery, and green beans. Stir well and cook for 5-7 minutes until vegetables begin
    to soften.
  3. Add the dried oregano, salt, and pepper, and mix thoroughly.
  4. Stir in the crushed tomatoes and vegetable broth, bringing everything to a boil. Reduce heat to low, allowing
    the soup to simmer for 25-30 minutes to allow the flavors to meld.

Pro version

  1. For an extra layer of flavor, add chopped pancetta or bacon to the pot during the sauté step.
  2. Cook until crispy and then remove before adding other ingredients.
  3. If using pasta, add farfalle (or any short tubular pasta) 5 minutes before serving to ensure it cooks through
    but remains al dente.
