Easy way to cook Asian Crunch Salad with Peanut Dressing

  1.  Shred, grate, and slice all vegetables. 
  2. Cook Edamame,  Boil or microwave for 3–4 min, then rinse cold. 
  3.  Mix all dressing ingredients until creamy. 
  4.  Combine all veggies in a large bowl, drizzle with dressing, and toss to coat. 
  5.  Top with sesame seeds & crushed peanuts. 

Pro version

  1.  Add rice noodles for a cold noodle salad twist. 
  2.  Top with grilled tofu, shrimp, or shredded chicken for protein. 

Tips / Plating:

  1.  Serve in a deep bowl with chopsticks and lime wedges on the side. 
  2.  Garnish with extra herbs like cilantro or Thai basil.
