Easy way to cook Brazilian Moqueca (Fish Stew)

  1. In a large pot, heat palm oil over medium heat.
  2. Sauté onions until golden; add garlic, peppers, and green beans, sautéing until softened.
  3. Stir in diced tomatoes and cook until they break down into a stewed consistency.
  4. Add fish pieces, turmeric, cumin, bay leaves, and annatto paste. Stir well.
  5. Pour in water or broth; bring to a simmer, then reduce heat, covered, for 25-30 minutes.
  6. Remove fish, flake into smaller pieces, and return to stew.
  7. Adjust seasoning with lime juice, salt, and pepper.
  8. Serve hot over rice, garnished with fresh herbs and lime wedges.

  2.  Add chili flakes for extra heat.
