Easy way to cook South African Bobotie

  1. In a large pot, heat 2 tablespoons of oil over medium heat. Brown the beef mince in batches until evenly
    browned. Set aside.
  2.  In the same pot, sauté onions, garlic, and ginger until soft and translucent. Add lemon juice and soy sauce
    (if using) for a tangy flavor.
  3. Stir in turmeric, coriander, cumin, paprika, chili powder, curry powder, and cloves. Toast the spices
    slightly to enhance their flavor.
  4. Return the browned mince to the pot with the sautéed aromatics and spices. Mix well and cook for about 5
    minutes.
  5. In a separate pan, make a roux by cooking flour in butter until it becomes a golden-brown paste without
    burning.
  6. Stir the roux into the meat mixture and mix thoroughly. Add apricot jam, vinegar, sugar, salt, and pepper.
    Simmer on low heat until thickened and the meat is tender.
  7. Mix flour with a little water or fat to make a dough. Roll out the pastry and place over the meat mixture,
    sealing edges.
  8. Bake at 180-200°C (350-400°F) until the pastry is golden and the meat is cooked through. Let cool slightly
    before serving.

  2. Ensure roux is well-cooked to prevent burning and lumping.
  3. Adjust seasoning based on personal preference.
