Easy way to cook Mediterranean Quinoa & Chickpea Salad

  1. Rinse quinoa under cold water and drain well.
  2. In a medium saucepan, heat 150g of water over medium heat until it reaches a boil.
  3. Add quinoa, stir gently, cover, and reduce heat to low. Simmer for 15-20 minutes until the water is absorbed.
  4. Remove from heat and let it rest for 5 minutes. Fluff quinoa with a fork or spoon before using.
  5. In a bowl, whisk together olive oil (40g), lemon juice (30g), garlic (5g), salt (8g), and black pepper (4g).
  6.  Add chicken breast pieces to the bowl and coat evenly. Let marinate for at least 10 minutes while you prepare the vegetables.
  7. Halve cherry tomatoes and cucumber, then dice the cucumber. Chop red onion and basil.
  8. In a large bowl, combine cooked quinoa, marinated chicken breast (shredded into bite-sized pieces), cherry
    tomatoes, cucumber, red onion, olives, and crumbled feta cheese.
  9. Pour the dressing over the salad and toss gently to combine. Let sit for 5 minutes to allow flavors to meld.
