Easy way to cook Ethiopian Misir Wat

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until soft and translucent.
  2. Stir in berbere, fenugreek, cumin, cardamom, and ginger. Sauté for about 1-2 minutes to toast the spices.
  3. Add red lentils to the pot and stir well to coat with the spice mixture. 
  4. Pour in water or stock, bringing it to a boil.
  5. Reduce heat to low, cover the pot, and allow to simmer for 20-25 minutes until lentils are tender.
  6. Stir in sugar or honey (if using) and adjust seasoning with salt and pepper. 
  7. Simmer an additional 5 minutes to meld flavors.

Pro version

  1. Add a spoonful of berbere that's been fermented in a lemon juice solution for a tangier note.
  2. Or create a sauce using fermented mustard or honey.
  3. Use a mix of red and brown lentils to increase protein content.
  4. Extend the cooking time by an hour after adding lentils, allowing the spices to infuse deeply into the stew.

Tips / Plating:

  1. Serve with injera if available; otherwise, use flatbread or pita.
  2. Garnish with parsley, cilantro, or pickled vegetables for a refreshing touch.
  3. Pair with a side salad or roasted veggies for a balanced meal.
