Easy way to cook Thai Green Papaya Salad

  1. Prepare the Papayas:** Peel the green papayas with a sharp knife, being careful to remove any hard parts or
    seeds.
  2. Cut into chunks, about 2 cm in size. If using, soak the shrimp in a bowl of lightly salted water for 15
    minutes to marinate.
  3. In a small bowl, combine the fish sauce, palm sugar, tamarind paste, and lime juice. Stir until the sugar dissolves. Set aside.
  4. If using shrimp, heat the vegetable oil in a pan over medium heat.
  5. Add the minced garlic and shallots, cooking for 1-2 minutes until fragrant. Remove from heat and set aside to cool slightly.
  6. In a large bowl, combine the green papayas, red Thai chilies, and chopped basil leaves.
  7. If using shrimp, add them to the bowl as well. Pour the dressing over the ingredients and toss everything until evenly coated.
  8. Taste and adjust the seasoning with additional salt if needed. Let sit for 10 minutes to allow the flavors to meld.
  9. If using shrimp, ensure they are well-coated in the dressing. Serve immediately for a fresh texture.
  10. Let the papaya chunks marinate in the dressing for 10 minutes before serving.

Pro version

  1. Use a mortar and pestle to pound the garlic and shallots for a more aromatic dressing.
  2. Adjust the spiciness by adding more or fewer chilies to taste.

Tips / Plating:

  1. Arrange the salad in a large mortar or bowl, surrounded by fresh Thai basil and crispy fried shallots.
  2. Drizzle extra lime dressing over the top and serve with toasted coconut flakes as a crunch.
  3. Serve with fresh basil leaves on top for garnish.
