Ingredients / Shopping list:

Easy way to cook Grilled Halloumi & Veggie Platter with Balsamic Glaze

  1.  Toss zucchini, peppers, tomatoes with olive oil, salt, pepper, herbs.
  2.  Over medium-high heat, grill for 4–5 min per side until tender and charred. 
  3.  Add cheese slices to grill. Cook 2–3 min per side until golden and soft inside. 
  4.  Arrange everything on a platter, drizzle balsamic glaze, sprinkle fresh herbs. 

Pro version

  1.  Add grilled lemon slices or a squeeze of fresh lemon to the halloumi. 
  2.  Serve with a base of couscous or quinoa for a fuller meal. 

Tips / Plating:

  1.  Use a large rustic plate or board. 
  2.  Stack veggies casually, place grilled halloumi slices on top, and finish with glaze + herbs.
  3.  Fresh, casual, but elegant.
