Easy way to cook Vietnamese Pho Ga

  1. Soak the pho noodles according to package instructions.
  2. Marinate chicken in a mixture of lemongrass paste, garlic, shallots, oil, sugar, fish sauce, and coriander.
  3. Let sit for optimal flavor absorption.
  4. In a large pot, heat oil with lemongrass and ginger. Add onions and garlic, sauté until fragrant.
  5. Stir in tomatoes and cook until they break down into a thick base.
  6. Add chicken to the pot, ensuring it's submerged in liquid. Simmer for about 1 hour until tender.
  7. Remove chicken, shred meat, and return to broth.
  8. Adjust fish sauce, sugar, and coriander roots to enhance flavor. Serve hot.
  9. Arrange noodles in bowls, top with soup, add shredded chicken, green onions, and garnish with lime wedges.
