Easy way to cook Citrus Avocado & Fennel Salad

  1. Slice the oranges and grapefruit into rounds or segments. Remove seeds. 
  2. Use a mandoline or sharp knife to slice it paper thin.
  3. Whisk olive oil, lemon juice, honey, salt, and pepper. 
  4. Layer greens, citrus slices, avocado, fennel, and mint. 
  5.  Drizzle the dressing over everything right before serving. 

Pro version

  1.  Sprinkle some crushed pistachios or roasted sunflower seeds on top for crunch and extra nutrients. 
  2.  Use blood orange when in season for a gorgeous color contrast. 

Tips / Plating:

  1.  Serve on a white or dark ceramic plate to make the colors pop. 
  2.  Works beautifully as a starter, or with grilled tofu or shrimp on the side.
