Easy way to cook Honey Garlic Glazed Salmon with Roasted Vegetables

  1. In a small bowl, whisk together olive oil, honey, soy sauce, Dijon mustard, garlic, black pepper, salt, and lemon juice. 
  2. Coat salmon fillets with the mixture and let marinate for 10 minutes. 
  3. Toss the zucchini, bell pepper, red onion, and broccoli with olive oil, salt, pepper, and paprika. 
  4.  Preheat oven to 200°C (400°F). Line a baking tray with parchment paper. 
  5.  Arrange the vegetables on one side of the tray and place salmon fillets on the other side. 
  6.  Bake for 15 minutes, then broil for 2-3 minutes to caramelize the glaze. 
  7.  Remove from the oven and let rest for 2 minutes before serving.
