Easy way to cook Mango, Edamame & Avocado Rice Salad

  1. Boil rice according to package instructions. Let it cool. 
  2. Boil for 3–4 min, then rinse under cold water. 
  3. Whisk all ingredients until smooth. 
  4. Combine rice, mango, avocado, red pepper, red onion, and edamame in a bowl. Drizzle with dressing and toss gently. 
  5. Top with sesame seeds and fresh herbs. 

Pro version

  1.  Add a handful of roasted peanuts or cashews for crunch and healthy fats. 
  2.  A dash of chili flakes gives it a spicy edge. 

Tips / Plating:

  1.  Serve it chilled in a bowl with lime wedges and a sprinkle of microgreens. 
  2.  Great in a mason jar for on-the-go meals.
