Easy way to cook Creamy Avocado Spinach Pasta

  1. Cook Pasta: Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and set aside, reserving ¼ cup of pasta water. 
  2. Prepare Sauce: In a blender or food processor, combine avocado, spinach, garlic, olive oil, lemon juice, Parmesan cheese, almond milk, salt, and pepper. 
  3.  Blend until smooth and creamy. Add reserved pasta water for a silkier consistency. 
  4.  Return the cooked pasta to the pot and pour the avocado-spinach sauce over it. Toss to coat evenly. 
  5. Heat gently over low heat for 1-2 minutes to warm up the sauce without overcooking.
  6.  Serve immediately, topped with cherry tomatoes, pine nuts, and fresh basil. 

Pro version

  1.  Add grilled chicken or shrimp for extra protein. 
  2.  Sprinkle nutritional yeast instead of Parmesan for a vegan version. 
  3.  Use zucchini noodles for a lower-carb alternative.
