Easy way to cook Mediterranean Grilled Chicken Salad

  1. Marinate the Chicken: In a bowl, mix olive oil, oregano, paprika, black pepper, salt, minced garlic, and lemon juice. Coat the chicken breasts in the marinade and let sit for 10 minutes. 
  2. Prepare the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, oregano, minced garlic, salt, and pepper. Set aside. 
  3. Chop Vegetables: Dice cucumbers, halve the cherry tomatoes, slice the onion, and chop lettuce if needed. 
  4. Heat a grill pan or outdoor grill to medium-high heat. 
  5. Cook the chicken for 7-8 minutes per side or until internal temperature reaches 75°C (165°F). Let rest for 5 minutes before slicing. 
  6. Assemble the salad by placing mixed greens in a large bowl. Add cucumbers, tomatoes, red onion, olives, and crumbled feta cheese. 
  7. Place the sliced grilled chicken on top. 
  8. Drizzle the dressing over the salad and toss gently to combine.
