Easy way to cook Roasted Carrot & Lentil Herb Salad

  1.  Toss carrots with olive oil, cumin, paprika, salt, and pepper. Roast at 200°C for 25 minutes. 
  2.  Simmer in water for 20-25 min until tender, then drain and cool. 
  3.  Mix all ingredients until creamy and smooth. 
  4.  In a bowl, add greens, lentils, chopped herbs, and roasted carrots. 
  5.  Drizzle with tahini dressing and mix gently. 

Pro version

  1.  A spoonful of crumbled goat cheese or feta elevates this salad if you’re okay with dairy. 
  2.  Serve with toasted sourdough for a rustic touch. 

Tips / Plating:

  1.  Layer lentils and greens first, top with warm carrots, herbs, drizzle dressing in a zigzag, and sprinkle seeds. 
  2.  Looks amazing on a ceramic or wood plate.
