Lebanese lentil soup

Ingredients / Shopping list:

Easy way to cook Lebanese lentil soup

  1. Slice onions into small pieces
  2. Remove peel from garlic, crush garlic clove
  3. Wash excess starch from lentils
  4. Add a pan to the stove, medium heat
  5. Add oil to pan
  6. Add Onion to pan, bake for a minute
  7. Add Garlic to pan
  8. Add curry powder + paprika powder to pan
  9. Bake for 2 more minutes, stirring regularly
  10. Add washed lentil to pan, stir for another minute
  11. Add the water, Add vegetable stock tablet
  12. Boil the soup for 10 minutes, adding extra water if needed
  13. Add the 50 grams of rice + optional raisins
  14. Blend the soup shortly, keep some structure of the rice and raisins
  15. Slowly boil for another 5 minutes

Pro version

  1. Add pan to fire, add oil
  2. Slice onion, garlic, add to pan
  3. Add spices, vegetable broth, stir, add lentils
  4. Add water, cook for 10 minutes
  5. Add rice, raisins, cook another 10 minutes
  6. Blend shortly, cook for a few more minutes until done

Tips / Plating:

  1. Add a little coconut cream before blending, it makes another soup
  2. Add tumuric, parsley for another flavour profile
  3. Serve with some creme fraiche
  4. Use mushroom stock to make it more hearty
  5. Add little acid (lemon juice) to lift it up
