Easy way to cook Greek Chicken Souvlaki

  1. In a large bowl, combine the chicken cubes with Greek yogurt, olive oil, minced garlic, lemon juice, oregano,
    thyme, salt, and pepper.
  2. Mix until the chicken is evenly coated. Cover and marinate in the fridge for at least 1 hour (ideally overnight for better flavor absorption).
  3. Preheat a grill or grill pan over medium-high heat. Drizzle olive oil over the bell peppers, zucchini, and
    cherry tomatoes. Season with salt and pepper. Set aside until ready to grill.
  4. In a small bowl, combine Greek yogurt, cucumber, minced garlic, mint, lemon juice, salt, and pepper. Mix well and refrigerate for at least 30 minutes before serving.
  5. Thread chicken cubes onto metal skewers, making sure not to overcrowd them. Grill for about 15-20 minutes total, flipping halfway through, until cooked through (internal temperature of 165°F or 75°C).
  6. Remove from skewers and set aside.
  7. Place the bell peppers, zucchini, and cherry tomatoes on the grill or grill pan.
  8. Grill for about 10-15 minutes, turning occasionally, until tender and slightly charred. Set aside to cool.
  9. Arrange grilled chicken skewers and vegetables on a large platter.
  10. Drizzle tzatziki sauce over the top (if using) and garnish with fresh parsley or mint leaves.
  11. Serve alongside a small Greek salad and lemon wedges for an extra burst of flavor.

Pro version

  1.  For a deeper, richer flavor, marinate the chicken for at least 4 hours or even overnight. 
  2.  Instead of dried oregano, use fresh oregano or a mix of fresh Mediterranean herbs like basil or mint for an even more vibrant flavor profile. 
  3. While the yogurt sauce in the base recipe is great, for the ultimate Greek experience, make a homemade tzatziki sauce with Greek yogurt, cucumber, garlic, dill, lemon juice, and olive oil. 

Tips / Plating:

  1. For a fuller meal, pair this dish with a side of mixed greens or a small Greek salad.
  2. Garnish with fresh lemon wedges and herbs like parsley or mint for a vibrant finish.
  3. Best served hot off the grill, but leftovers can be stored in the fridge for up to 2 days.
