Traditional Serbian Bean Stew

Easy way to cook Traditional Serbian Bean Stew

  1. Place the white beans in a bowl with enough water to cover them by about 2cm. Let soak
    overnight or for at least 8 hours.
  2. In a large pot, heat the olive oil over medium heat. Add the onions and carrots, sautéing until softened (about 5 minutes). Add the potatoes and cook for another 10 minutes, stirring occasionally.
  3. Stir in the minced garlic, paprika (if using), salt, pepper, and oregano or thyme. Mix well to coat the vegetables.
  4. Add the grated tomatoes to the pot and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 30 minutes, or until the beans are cooked and the vegetables are fork-tender.
  5. For a smoother stew, transfer about half the liquid to a blender and pulse until smooth. Pour it back into the pot, stirring well to combine.
  6. Let the stew simmer for another 15 minutes to allow the flavors to meld. If using red beans, add
    them in the last 10 minutes of cooking.
