Easy way to cook Italian Wedding Soup

  1. Toast the breadcrumbs in a pan with olive oil over medium heat until golden brown. Set aside.
  2. Combine the meatball ingredients in a bowl. Mix gently, being careful not to overwork the mixture.
  3. Shape the meatball mixture into small rounded balls (about 1.5cm in diameter).
  4. Heat a large pan or skillet over medium heat and add olive oil.
  5. Carefully place the meatballs into the pan, ensuring they are evenly spaced. Brown on all sides, then transfer to a baking sheet or oven-safe dish.
  6. Bake at 180°C (350°F) for 15-20 minutes until cooked through.
  7. In the same skillet used for the meatballs, sauté the onion, carrots, celery, and leek in olive oil over medium
    heat until softened.
  8. Add the garlic, bay leaf, salt, and pepper.
  9. Pour in the broth and bring to a simmer.
  10. Let the broth simmer for 10 minutes, allowing the flavors to meld.
  11. While the broth simmers, cook the pasta according to package instructions. Drain and set aside.
  12. Once the meatballs are baked, transfer them back to the pan with a little extra olive oil and cook for an
    additional 2 minutes on each side to brown further.
  13. Add the pasta to the simmering broth, cooking until al dente. Stir in the greens and cook just until wilted.
  14. Remove the bay leaf and adjust seasoning to taste.
  15. Ladle the soup into bowls, top with cooked meatballs, pasta, greens, and a sprinkle of Parmesan cheese.
  16. Serve immediately with crusty Italian bread or garlic knots on the side.
