Good on a cold autumn evening, warming soup
My girlfriend likes this, we made it from a family recipe but made it vegatarian by changing a few ingredients.
I make this for myself or my buddies if we have some fatty meats like rib eye or steaks, brisket. The mint gives it some extra freshness.
My mom makes this for us. I like the sourness of the lime, with the texture of the chopped peanuts and roasted cocos.
Its a cold soup, keep in mind it needs to cool down before eating it.
As close as we can get it to the original recipe, this is a really creamy version without any cream
